Peach Tarte Tatin

  • 8 sheets of filo pastry
  • 1 cup caster sugar

  • 1 vanilla bean split

  • 6-7 peaches, cut in half
  • 50g butter

  • Cream to serve



Select a round tin or overproof saucepan and brush with butter.

Place one sheet of filo in the tin and brush with melted butter, repeat with the remaining sheets of pastry, aligning the pastry layers each time.

Place tray in a 180 degree oven and bake for 20 mins until golden brown.

To prepare the peaches, place sugar and vanilla in a saucepan and cook, stirring frequently until golden brown.

Arrange peaches on top of cooked pastry and brush with sugar mixture, spreading evenly and generously across the whole tin. 

Dot tin with small pieces of butter and bake in a 180 degree overn for 25 minutes until the peaches are cooked through and caramalised.

Serve with a generous portion of cream.
